Dried Feijão Carioca Pinto Beans
3 x 1kg Dried Pinto Beans, known as Carioca Beans in Brazil. These delicious beans are full of flavour, protein and vitamins. They are a staple around the world, especially in Brazil.
Typical Recipe for Brazilian style Feijão Carioca
Ingredients
2 cups dried carioca beans
3 bay leaves
1 Cup of bacon pieces
1 Onion, chopped
1/2 bulb garlic
Salt
Method
Soak the beans overnight, then boil with the bay leaves. If using a pressure cooker it will take around 20-30 minutes. If you are using a regular pan, it will probably be around 2 hours.
Shallow fry the onion, garlic and bacon and then add a few beans to the mixture, squashing the beans to give a paste texture. Now add the rest of the beans including water and cook over a low heat until the sauce thickens. Add salt to taste and service with rice.
