Barão is one of Brazil’s most important brands of yerba mate (erva mate). This is the traditional blend of green yerba mate – perfect for making the Brazilian version of mate – Chimarrão. Brazillian yerba, although produced the same plant is quite different to Argentinian, Uruguayan and Paraguayan yerba. Differences in the way the yerba is dried and milled means the blend is bright green with a mixture of mainly very very fine powder, and large stems.
The organic blend from Barao is the perfect balance between flavour and sustainability. Organic Barao is produced from a certified native yerba which allowed for a sustainable management of the environment and preservation of the local soil in a balanced manner. The leaves are dried in a treamill dryer with hot air, at lower temperatures and with no contact with smoke, thus providing the purest flavour of yerba mate, a purer product with more intense colour.

Brewing Your Yerba Mate
The tradition of drinking yerba mate is such an important part of the South American culture, specifically in Uruguay, Paraguay, Argentina and Brazil, although it is also enjoyed in other South American countries. Typically, it is drunk from a natural gourd (a hollowed out fruit) used as a cup, and then sipped through a metal straw known as a bombilla that has a filtered end to separate the infusion from the yerba leaves.
Making Chimarrao is quite different to regular hot mate. If not approached in the right way, the drink just won’t work, and you might end up with a big mess!
