Brewing Your Yerba Mate

The tradition of drinking yerba mate is such an important part of the South American culture, specifically in Uruguay, Paraguay, Argentina and Brazil, although it is also enjoyed in other South American countries. Typically, it is drunk from a natural gourd (a hollowed out fruit) used as a cup, and then sipped through a metal straw known as a bombilla that has a filtered end to separate the infusion from the yerba leaves.

With any purchase of loose leaf yerba, full photo instructions will be provided on how to brew the perfect yerba mate. If you get it right, your yerba will always taste great, and last twice as long. Practice makes perfect!

The traditional cup to use for yerba mate is a gourd. It is made from the hollowed and dried fruit of the calabash plant. If you are choosing this natural gourd, then you are making a very specific choice. The natural gourd is not to everyoneโ€™s liking! What does a natural gourd bring to your infusion?

So what you are letting yourself in for?! Let’s address the common surprises our customers encounter:

  • A natural gourd is just that โ€“ natural! So your gourd will vary in shape and size
  • The gourd was once a fruit, like a small pumpkin that is hollowed out. It is normal when you receive your gourd for there to be a little leftover pith or seeds. Any loose debris can be removed and isnโ€™t harmful.
  • On arrival the inside of your gourd may be beige, green, brown, black. It may well be a bit of a blotchy mix of these colours. When you start using it, it will definitely start turning darker. It may change through green, to brown and finally the whole inside will be black. This is because the gourd is porous and takes on the pigmentation and flavour of the yerba. This change in colour is sometimes mistaken for mould formation. It may happen gradually over many weeks, or it might surprise you and suddenly take on a very specific, deep green blotchiness after a single use. This is all dependent on how porous the gourd is. Remember, we WANT the gourd to eventually end up black inside, this is how it is supposed to be.
  • Mould can form on your gourd. It is something that grows over the surface that is furry in texture. While not pleasant, it is harmless. Remove it then pass salt around the inside of the gourd, rinse and continue to use. Best practice is to keep your natural gourd clean and dry between uses. Don’t leave it full of used yerba for long periods.
  • The taste! While some opt for a gourd because of the taste, some hate the taste and it can cause acidity if you are susceptible to acid indigestion.

Its easy to cure a gourd, and it basically entails leaving it for a period of time full of yerba. This helps seals some of the pores, prevents cracking and improves the richness of flavour of future brews. How to Prepare Yerba Mate

There’s no single “right” way to drink yerba mate โ€” it depends on your mood, the weather, and what you enjoy. Here are the most popular methods, from the classic hot mate to refreshing iced tererรฉ.


๐Ÿ”ฅ Hot Mate โ€” The Classic

The traditional way to enjoy yerba mate, shared across Argentina, Uruguay, and beyond.

  1. Fill the gourd โ€” Add yerba mate to about โ…” of the gourd.
  2. Tilt and shake โ€” Cover the opening, turn upside down and shake gently. This brings fine dust to the top and prevents clogging.
  3. Create a slope โ€” Tilt the gourd so the yerba rests at an angle, leaving a gap on one side.
  4. Add cool water first โ€” Pour a small amount of lukewarm water into the gap. Let it absorb for 1โ€“2 minutes to protect the leaves.
  5. Insert the bombilla โ€” Place into the wet side, pressing gently to the bottom. Don’t move it after this.
  6. Pour hot water (70โ€“80ยฐC) โ€” Never boiling! Pour into the gap near the bombilla. Keep some yerba dry for later refills.
  7. Sip and refill โ€” Drink the full serving, then add more hot water. Good yerba can last 10โ€“20 refills.

๐ŸงŠ Tererรฉ โ€” Cold Mate

The go-to in Paraguay and northeastern Argentina โ€” perfect for hot days. Any yerba mate works for tererรฉ.

  1. Fill the gourd or cup โ€” Add yerba mate to about ยฝ of a gourd or tall cup (a guampa is traditional).
  2. Add ice โ€” Pack ice cubes on top of the yerba.
  3. Pour ice-cold water โ€” Fill to the top with cold water.
  4. Insert the bombilla and drink โ€” Refill with cold water as you go.

Popular in Paraguay, where tererรฉ is the national drink and enjoyed throughout the day โ€” especially in warm weather.

A fruity twist on tererรฉ โ€” very popular in Paraguay and a great way to introduce mate to newcomers.

  1. Prepare the gourd โ€” Fill with yerba mate and ice as with regular tererรฉ.
  2. Use cold juice instead of water โ€” Orange, grapefruit, lemon, and pineapple all work brilliantly. Mix with a little cold water if the juice is too strong.
