Hot Mate
Hot mate is traditionally drunk from a dried, hollowed gourd, the fruit of the calabash. This recipient also imparts a bitter flavour on the infusion. It is typically enjoyed with friend and family, with the server – “cebador” – serving over and over and each person taking a turn to drink from the gourd. Brewing Iced Terere
Paraguay’s national drink is Terere. Traditionally it is drunk from a guampa which is a hollowed and polished bull’s horn
To brew terere follow these steps:
- Fill your mate cup to about 1/2 full with loose leaf yerba
- Add some cool water and allow to soak for 2 minutes. This enhances the flavour as it infuses
- Add ice, herbs, fruit etc as suits your personal taste.
- Fill with iced water or juice, sip and repeat
