Christmas Dulce de Leche Alfajores

A must-do this Christmas season! Alfajores are a big deal in South America. Delicious crumbly biscuit sandwiches with a creamy milk toffee filling.. yum!!

Ingredients

1 3/4 cups cornstarch
1 cup flour
1/2 teaspoon baking powder
1 teaspoon salt
1 cup butter
1/2 cup powdered sugar
1-2 tablespoons Pisco or Brandy
1 teaspoon vanilla
1 cup dulce de leche
green food colouring

Preparation

Preheat oven to 350 degrees.

Place the cornstarch, flour, baking powder, and salt in a bowl and mix briefly.

Cut the butter into small pieces and add to the flour mixture, blending with your fingers until the mixture is smooth.

Add the powdered sugar, vanilla, and Pisco, and mix with your hands until the dough is homogeneous and smooth (add another tablespoon or two of Pisco if dough is too crumbly to form a ball). Let the dough rest in the refrigerator for 30 minutes.

Roll out dough to 3/8″ thickness, and use a Christmas tree cutter to cut out the cookies.

Place cookies on baking sheet lined with parchment paper.

Bake cookies for 8-10 minutes, until they are barely golden brown. Let cookies cook 5 minutes, then transfer to rack to cool completely.

To fill the cookies, spread one cookie with dulce de leche and top with second cookie. Careful, the cookies will be fragile, so it may help to warm the dulce de leche in the microwave for a few seconds.

Store in an airtight container.

Tip!! Use catering dulce de leche – the taste is intense and it is much firmer, thus holding its shape, which is especially ideal for alfajores. Browse our dulce de leche here for all other types.
