How to Make Tereré

The extremely refreshing infusion of yerba mate tereré is a way of life in Paraguay, and also popular in Argentina. It is similar to normal yerbamate, but prepared with cold water and/or juice, and is usually sweetened. The ingredients are:

  • Yerba Mate with high stem content (Paraguayan Yerba is most suitable)
  • A citric fruit juice e.g. orange/lemon/grapefruit
  • Cold Water
  • Ice
  • Sugar (optional)
You will also need a gourd (type of cup) and bombilla (metal straw with a filter at the end)
Follow these steps to prepare your Tereré
  • Fill your gourd ¾ full with yerba mate
  • Cover the top with the palm of your hand, shake and when you remove your hand, you will find the very fine particles of yerba removed
  • ‘Dig’ your bombilla in, following the contour of the mate
  • In a jug or flask, put the water, ice, juice of 2 citric fruit (lemons, grapefruit, oranges, whatever suits your taste) and sugar if you wish
  • Fill the gourd with water and drink. Repeat this step for more servings.
